
This is incredible dessert is inspired by my mother-in-law Lila. She is amazing in the kitchen! This strudel is simple to make but looks like you spent hours in the kitchen. The majority of the apples are green and tart and I pop in one red sweet apple to the mix. You will not believe how good apples taste in this recipe!
Vegan Croatian Apple Strudel
1 package Organic Filo Dough
½ cup organic oatmeal
¼ cup raw walnuts
2 teaspoons of cinnamon
¼ teaspoon salt
¼ cup organic maple syrup
1 organic Lemon- juiced
5 organic green apples
1 organic red apple
Powdered sugar (optional)
1 Tablespoon maple syrup with 1 tablespoon hot water (optional)
- Take your filo dough out of the refrigerator and let it sit in room temperature for 30 min-1 hour.
- Preheat oven to 400 degrees (Bake)
- Peel apples, remove the center & slice them so they fit into your food processor.
- Shred all the apples with your food processor.
- Transfer shredded apples to a glass bowl
- Change the blade of your food processor for chopping
- Add the walnuts to the food processor and process until fine powder
- Add the oatmeal to the walnuts and again process until you get a fine powder
- Add the walnut & oatmeal mixture to the apples
- Add cinnamon, maple syrup and salt to the apples
- Juice your lemon and add to the apple mixture
- Mix all the ingredients in your glass bowl with your fingers or a spoon
- Use a non-stick pan or lightly oil your glass pan using coconut oil.
- Remove any remaining apple parts from your cutting board.
- Open your filo dough carefully and place flat on your cutting board.
- Start putting your apple mixture on your filo dough in 3-4 row.
- Grab 2 filo doughs from your stack and roll it.
- Place the final roll on your pan with the smooth part on top.
- Repeat until all of your apple mixture is in.
- Put in the oven and set the timer for 15 minutes the first time you make this recipe.Depending on your oven, you will end up baking anywhere from 20 to 45 minutes.In my oven, I use “bake” and not “convection” for this recipe and it takes 45 minutes.
- When you see the top is light brown, take it out of the oven.
- Mix 1 Tablespoon maple syrup with 1 Tablespoon hot water and add to the top of the strudel with a dropper or brush.
- Cut your strudel.
- Add powdered sugar and serve
Cool Tips:
- You can melted hazelnut butter or melted chocolate chips drizzled on top with a fork
- If your filo dough cracks while you are rolling it, open it back up and grab one more filo dough and re-roll.
- As you create your rolls, mix your apple mixture once in a while.
- If you like more apples in your strudel, put in more apples and then use 4 filo dough sheets instead of 2.
- The most nutritious part of an apple is the peel so save the peels in an airtight container and juice them or snack on them later.
