
You will not believe that these moist and flavorful waffles have pretty much the same ingredients as a cup of oatmeal. These do not taste anything like a oatmeal!
Vegan Gluten-Free Bananafastic Waffles
1/2 Cup raw organic almonds
2 cups old fashioned slow cooking organic oatmeal
1 cup filtered or spring water
2 ripe bananas
3 Tablespoons maple syrup
2 Teaspoons vanilla
2 Teaspoons baking powder
1/4 Teaspoon of salt
Optional: add cinnamon, cocoa powder or chocolate chips
- Add the almonds to the food processor and grind until like a powder
- Add oatmeal and grind with the almonds until you have a flour consistency
- Peel and add bananas to the food processor and process until smooth
- Add maple syrup, vanilla, baking powder and salt
- Process until everything is mixed and you have a smooth consistency
- Turn off the processor and scrape the side of the food processor
- Use a spoon to check for any lumps from the banana
- Close the lid and turn on processor one more time & heat-up your waffle maker
- Use a label to put in the batter when your waffle maker is ready
- You can keep your waffles warm in a warm crockpot
- Serve with a touch of powdered sugar and your favorite berries
- Enjoy!
