
This is our go-to special occasion sugar cookie recipe! You are going to fall in love with it! We love sugar cookies and this is the closest we have been able to get to the perfect vegan sugar cookie. Make sure you make a lot of cookies because your friends and family will attack these before you can say vegan! I tried to make this recipe with tahini, nut butter or coconut cream but the taste was just not the same so I recommend use the best quality vegan butter you can find!

Very Vegan Sugar Cookies
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup vegan butter softened not watery – Miyoko’s Creamery Vegan Butter
1 cup organic coconut sugar
2 Tablespoons organic ground flax seeds dissolved in 6 tablespoons warm water
2 teaspoons organic vanilla extract (no alcohol)
- Place vegan butter on the kitchen counter for a couple of hours to soften without heat
- Preheat oven to 375 degrees F.
- Sift the flour in a mixing bowl
- Add all the dry ingredients and mix
- Add the rest of the ingredients and combine with the handle side of a wooden spoon or use your fingers and squeeze everything together.
- Line 2 cookie sheets with parchment paper
- Get a tablespoon scoop of cookie dough and roll it into a ball.
- Place cookie balls on the cookie sheet and push down with your thumb.
- Bake for 8-10 minutes or until very light brown on top of cookies.
- Move parchment paper to cooling racks
- Enjoy!
